Locust Bean Gum is one of the noblest hydrocolloids (gums) that exist. It is a thickener, stabilizer of natural origin because it comes from the grinding of the carob seed, the carob bean. It provides texture by thickening, stabilizing, and can even gel when combined with other gums (forms gelatins of vegetable origin).
How to use
Locust Bean Gum is not cold soluble, so it must be hydrated and dissolved while heating. As it traps the liquid in the food, the way in which it is added is very important. Depending on the recipe:
• Sprinkle with a strainer
• Mix with other ingredients that are soluble, such as sugar.
• Disperse it in oil.
It is important while stirring is heating to prevent the gum from settling on the bottom of the container and not dissolving.
The optimum temperature is 85ºC keeping it for a while.
