Burger with goat cheese sauce
- Minced beef meat
- Sweet paprika
- Grain mustard
- Hamburger bread
- Goat cheese
- White onion
- Green tomato
- Red cabbage
- Vinegar and sugar
- CAROB locust bean gum
- Salt, pepper and olive oil
We put the minced beef in a bowl, add a tablespoon of quality mustard, a little paprika, salt, pepper and olive oil.
We shape the hamburgers and toast them.
We also toast some slices of white onion and green tomato.
Cut the red cabbage in julienne strips and season it with vinegar, salt, sugar and a drizzle of oil.
Dilute a teaspoon of CAROB locust bean gum in a glass of milk. We put it on the fire together with the goat cheese cut into pieces.
Let it cook for just a few minutes so that the cheese melts and the sauce emulsifies.
We assemble the burger with the cabbage, onion, tomato and a generous amount of cheese sauce.
