‘A la cuina de Marga’

- 4 aubergines
- 1 onion
- 1 piece of cod fillet
- Salt and pepper
- Oregano, garlic, parsley
- Locust bean gum (1 teaspoon of coffee)
Split the aubergines and boil in plenty of water for 10 to 15 minutes.
Drain the aubergines, let them cool and with a small spoon, empty them, taking care not to break the skin, and reserve.
Chop the onion and put in a pan with oil, poach.
Chop the cod and integrate in the same pan with the onion and mix.
Integrate the chopped and drained aubergine, and mix everything for about 5 minutes.
Mix all the dry ones with the locust bean gum in a bowl, sprinkle on top and stir well until it is integrated.
After boiling, turn off the heat and let it rest for half an hour.
After this time, fill the aubergines, cover them with grated cheese and bake for about 20/30 minutes at 185ºC.
