The Mallorcan chef Miquel Calent teaches us how to prepare a soupy vegetable rice step by step, in an easy way.
Sticky vegetable rice
- Bomba rice
- branch tomato
- spinach leaves
- Vegetable broth (we can do it here during the time that we will prepare the vegetables)
- Green asparagus
- boil peas
- Locust bean gum CAROB
- red hot pepper
- Salt, good pepper and olive oil
Cut the garlic, leek and tomato. We make a candied sauce but not very caramelized.
We fry a little and we can now put the spinach leaves.
Let cook for just a few minutes before adding the rice. Mix well so that it whitens.
Cover with broth to bake the rice. Let cook for five minutes.
After this time we put the boiling peas, asparagus and avocado in the pot. Add a little broth as requested.
Finish cooking and let rest for a few minutes before serving.
