Chef Miquel Calent teaches us how to make light, healthy chocolate custards that can be prepared in 3 minutes.
Light cocoa custard
- 1 liter of skimmed milk
- liquid sweetener
- 100 grams of cocoa powder
- 10 grams of locust bean gum
- Cool or herb-healthy mint.
Put the milk on the fire, reserve a glass.
Now add the cocoa to the pot and stir well
Dissolve the locust bean gum in the cold milk that we have astonished and let it hydrate for a few minutes.
Add the locust bean to the milk along with a little stevia-type sweetener. We make it boil just two minutes.
Remove from heat, strain and let cool.
Serve with a bit of grated dark chocolate, some red fruits and a mint or healthy-herb leaf.
