Miquel Calent transforms a pasta dish into a delicatessen. A simple recipe but full of flavor, in which we will combine various mushrooms with a few ingredients.
Spaghetti with light mushroom sauce
- Various mushrooms
- Carob Bean Gum
- Pickled hot pepper
- Cured cheese
- Marjoram or fresh oregano
- Salt, pepper and olive oil
We cut the bacon into small cubes and put them to brown in the pan, when it starts to take color we add the thinly sliced garlic.
We cut a pickled chilli or pepper and add it. We also put the assorted mushrooms and let them cook for two minutes.
Now we hydrate a spoonful of carob gum in a glass of milk, add it to the casserole, along with some marjoram or oregano leaves. Let’s leave it on the fire for three more minutes.
We incorporate the spaghetti that we will have cooked in salted water. Let’s do chup-chup just for a minute.
We serve accompanied by grated cheese, pickled cherry pepper and fresh marjoram or oregano leaves.
