‘A la cuina de Marga’
Antonia Oliver presents this light and appetizing dish, with a very easy preparation. Here is the recipe to make it at home, we hope you enjoy it.
- 250 gr of mushrooms
- 1 onion (best shallot)
- 5 gr of locust bean gum
- 3/4 of a liter of chicken broth
- 100 grams of fresh cream or cream
- 1 egg yolk
- Salt, pepper and chives
Clean the mushrooms and chop.
Sauté the onion in the butter.
Add the mushrooms and sprinkle with the locust bean gum.
Add the broth and cook for 15 minutes over low heat.
Mix it all up.
To serve, chop and add some sliced raw mushrooms and chopped chives.
